In this workshop, we will cover how you can introduce a robust allergen management system into your operation.

Allergen management at your food premises is so much more than completing an allergen awareness module during an online course. The FSA alerts that failure in allergen management is the leading reason behind product recalls in the UK.

When producing food, the introduction of an allergen management system requires careful consideration, from product development stage, through the supplier approval process, handling materials at the food premises and labelling.

We will cover allergen identification at your site, raw material risk assessment, risk assessment for cross-contamination, planning matrices, establishing procedures relevant to your practices, on-pack warning labels, allergen claims, allergen cleaning regimes and cleaning validations and verification.
